Quinoa Recipe – Quinoa Baked Potato
If you are in search of a healthy food to add to your diet, why not give quinoa a try? Light and fluffy this wholesome super food is a tasty way to boost the nutrition of about any dish! This versatile foot is a culinary chameleon of sorts; it is capable of blending in without standing out or serving as the centerpiece of a dish.
If you have never cooked quinoa before, there are a few things you will want to know before you get started. The number one quinoa cooking rule you need to remember is that quinoa must be well rinsed prior to cooking. To do this, place the quinoa in a fine metal strainer and rinse for three to four minutes, or until your water runs clear. The reason for rinsing is that the outside of quinoa is covered in a very bitter substance called saponin. It is so bitter and soap like that in ancient times people would rinse quinoa and reserve the water for bathing.
One of my favorite recipes for quinoa is this great stuffed baked potato recipe. Give it a try and you will see that eating healthier doesn’t mean that you have to sacrifice taste!
Quinoa Baked Potato
4 medium baking potatoes
Olive oil spray
1/3 cup vegetable broth
¼ cup quinoa
1 cup milk
¼ cup melted butter
3 cups chopped fresh broccoli
1 ½ cups shredded cheddar cheese
4 green onions, sliced
Directions
Preheat the oven to 400 degrees. Spray washed potatoes with olive oil spray. Cook directly on the rack for one hour.
Meanwhile, bring vegetable broth and quinoa to a simmer over medium high heat. Reduce heat to low. Cover and cook for 30 minutes. Fluff with a fork.
In a heavy saucepan, heat milk. Remove potatoes from oven. Cut lengthwise and scoop out potato flesh. Place in large bowl, mash and add in the milk and melted butter. Salt and pepper to taste. Stir in broccoli, one cup of the cheddar cheese and quinoa.
Return mixture to potato skins. Stop with cheddar cheese and green onion. Bake for 10 minutes.
